ベトナム・ラムドン省ズンクノ、標高1,500〜1,600mの山間部に位置するLoc Rung。 ビドゥプ・ヌイバ国立公園とチューヤンシン山に囲まれた冷涼な地域で、コーヒーの収穫期には朝晩の気温が9〜12℃ほどまで下がります。昼夜の大きな寒暖差の中でチェリーがゆっくりと成熟し、クリーンでジューシーな酸と豊かな甘さを備えたコーヒーが育まれます。 Loc Rungは、20〜30代のメンバーを中心とする新しい世代の生産者チームです。「森を守る・人を助ける・おいしいコーヒーをつくる」という理念のもと、自然環境の保全や地域の雇用、継続的な品質向上に取り組んでいます。 このCM Washedロットは、収穫した完熟チェリーを洗浄・選別して果肉を取り除いた後、密閉タンクへ入れて二酸化炭素を充填。酸素の少ない環境で4日間発酵させ、洗浄・乾燥して仕上げています。 カップからはローズソーダやアップルブロッサムを思わせる、華やかで爽やかな香りが広がります。ホワイトピーチやアプリコットの柔らかな果実感に、シトラスを思わせる瑞々しく明るい酸が重なります。 カーボニックマセレーション由来の立体的な香りを持ちながら、ウォッシュドらしい透明感も備えた味わい。滑らかな甘さと、花や白い果実を思わせるクリーンな余韻が印象的なコーヒーです。

Vietnam Loc Rung Catimor CM Washed

Located in the mountainous region of Dung Kno, Lam Dong, Vietnam, Loc Rung sits at 1,500–1,600 meters. Surrounded by Bidoup Nui Ba National Park and Chu Yang Sin Mountain, the cool climate and significant difference between day and night temperatures allow the cherries to mature slowly, developing clean, juicy acidity and rich sweetness.

Loc Rung is a new generation of coffee producers, led mainly by members in their twenties and thirties. Guided by the philosophy of “protecting the forest, supporting people, and making delicious coffee,” they work to preserve the natural environment, support the local community, and continuously improve coffee quality.

For this CM Washed lot, fully ripe cherries are carefully sorted and depulped, then fermented for four days in sealed tanks filled with carbon dioxide before being washed and dried.

The cup opens with floral aromas of rose soda and apple blossom. Soft notes of white peach and apricot are layered with fresh citrus-like acidity. Carbonic maceration brings aromatic depth, while the washed process maintains clarity, finishing with smooth sweetness and a clean impression of flowers and white fruits.
