ブラジル・ミナスジェライス州、カンポ・ダス・ヴェルテンテス地区のサント・アントニオ・ド・アンパロに位置するグアリロバ農園。
5代にわたって受け継がれてきた農園で、現在はガブリエル・ラムニエール氏を中心に、伝統的な栽培と先進的な発酵技術を組み合わせたコーヒーづくりに取り組んでいます。
この「Limited Reserve B」は、農園が品質向上を追求し、収穫から発酵、乾燥まで特に多くの時間と手間をかけて仕上げた希少なロットです。
品種は、ブラジルの研究機関EPAMIGなどによって開発されたMGS Paraíso 2。Catuaí Amarelo IAC 30とHíbrido de Timor UFV 445-46の交配から生まれた品種で、明るい柑橘系の酸とクリーミーな甘さ、厚みのある質感を特徴としています。
収穫した完熟チェリーは、温度管理されたステンレスタンクへ投入。15℃の低温環境を保ちながら、約20日間にわたってゆっくりと嫌気性発酵を行います。
短時間で強い発酵感をつくるのではなく、低温で穏やかに発酵を進めることで、透明感のある甘さと華やかで立体的な香りを引き出しています。
発酵後は果皮を取り除き、ミューシレージを残したブラックハニーで精製。アフリカンベッドに薄く広げ、乾燥と休息を繰り返しながら、直射日光を避けて約40日間じっくりと陰干しされます。
豆の内外の水分を均一に整えることで、発酵由来の複雑な香りと果実の甘さを保ちながら、クリーンなカップに仕上げています。
カップからは、ライムやレモネードを思わせる明るく爽やかな酸に、パイナップルのようなジューシーな果実感と、カルダモンを思わせる清涼感のあるスパイスのニュアンス。
温度が下がるにつれて、蜂蜜のような濃密な甘さとほのかなナッツ感が現れ、クリーミーで厚みのある質感とともに長い余韻が続きます。
約20日間の低温発酵と約40日間の緩やかな乾燥によって、Paraísoの明るい酸と豊かな甘さを立体的に表現した、果実味、スパイス感、透明感を兼ね備えたグアリロバ農園の特別なコーヒーです。

Brazil Fazenda Guariroba Limited Reserve B Paraíso MG2

Located in Santo Antônio do Amparo, in the Campo das Vertentes region of Minas Gerais, Brazil, Fazenda Guariroba is a fifth-generation family farm. Led by Gabriel Lamounier Vieira, the farm combines traditional cultivation with advanced fermentation techniques to produce distinctive specialty coffees.
Limited Reserve B is a rare lot created through meticulous attention to every stage of production, from harvesting and fermentation to drying.
The variety, MGS Paraíso 2, was developed by Brazilian research institutions, including EPAMIG, through a cross between Catuaí Amarelo IAC 30 and Híbrido de Timor UFV 445-46. It is known for its bright citrus acidity, creamy sweetness, and rich body.
Fully ripe cherries are placed in temperature-controlled stainless steel tanks and undergo slow anaerobic fermentation at 15°C for approximately 20 days. Rather than creating intense fermentation flavors in a short period, this gentle, low-temperature process develops delicate aromatic complexity and clean, layered sweetness.
After fermentation, the cherries are depulped, leaving the mucilage intact for black honey processing. The coffee is then spread thinly on African beds and shade-dried for approximately 40 days, alternating between drying and resting periods to achieve even moisture distribution.
This careful process preserves the coffee's complex aromatics and natural fruit sweetness while maintaining remarkable clarity in the cup.
Bright notes of lime and lemonade are layered with juicy pineapple and a refreshing hint of cardamom. As the coffee cools, rich honey-like sweetness and subtle nuttiness emerge, accompanied by a creamy texture and a long, lingering finish.
Through 20 days of low-temperature fermentation and 40 days of gentle drying, this exceptional lot beautifully expresses the vibrant acidity, rich sweetness, and aromatic complexity of Paraíso.
